Spring inspires me to spike my drink with fruit and fun. Spring is also when I pull out my sundresses to see what fits. These two spring traditions may seem to contradict, but not at my house. After a little experimentation, I found my new favorite easy-on-the-sweet spring cocktail. I call it the Spring Liliko’I Cooler, featuring the ever trendy Passionfruit La Croix. (Liliko’I means passionfruit at the best place on Earth – Kauai.) It’s a breeze to make and is great for when you need to imagine you are at a beach.
Grab a glass, and fill it halfway with hulled strawberries and 1” pieces of lime.
Muddle the fruit together with 1 teaspoon-1 tablespoon of honey using the end of a spatula or wooden spoon. I prefer the smaller amount of honey, especially when strawberries are in season and pure natural sweetness. Adjust the honey to your taste, starting small and working up. Or if you want a straight-up sweet drink, use sugar or simple syrup. Mix in 1-2 oz of vodka. I recommend going easy on the vodka, because this goes down smoothly and quickly. Next, add ice. Proportion-wise, the drink is best when it is about half fruit and vodka and half La Croix. Top to the brim with Passionfruit La Croix. Mix the drink together to evenly disperse the fruit. Add a straw so you can continue to mix the contents as you go.
Now close your eyes, imagine you are in this part of the world, sip, and enjoy.
Ingredients
(Yields 1 drink)
- 3-4 strawberries, rinsed and hulled
- 3-4 1” pieces of lime
- 1 tsp-1 tbsp honey or sugar or simple syrup – it all depends on your preference
- 1-2 oz vodka (any brand, chilled is even better)
- Passionfruit LaCroix (If you have a tough time finding this flavor, Target always has it.)
Muddle strawberries, lime, and honey. Add vodka and stir. Fill the glass with ice. Top with Passionfruit LaCroix. Enjoy!
